Gingerbread Biscuits

Ingredients

Dry:                                           

1 cup Rye Flour

1 cup of Wholewheat Flour

1/2 cup of Coconut sugar

1 tbsp Ground ginger

2 tsp Cinnamon

1 tsp Nutmeg

1 tsp Baking soda

Pinch of salt

Wet:

1/2 cup of Coconut oil

1/4 Almond Milk                                                              

 

Method

1. Preheat oven to 180 degrees celsius.

2. Mix together all the dry ingredients.

3.Melt the coconut oil in a saucepan.

4.In a separate small bowl, add the almond milk. When the coconut oil is melted, stir into the bowl.

5.Pour the wet mixture into the dry mixture and mix together until a dough is formed. Add more milk if necessary.

6. Lay some flour on a surface and start rolling out the dough.Roll until about a half a cm thick.

7. Use a cookie cutter to cut out as many you can from the dough.

8.Place on baking paper on a tray and bake for 12-15 minutes.
