Coconut Macaroons

A simple, easy recipe to make that is so tasty and it is full of coconut. You can store in the fridge, if you have so many left over and treat yourself to it another time. If you can help it.

Ingredients

120g unsweetened desciccated coconut

50g ground almonds

60ml maple syrup

55g coconut oil, melted

1 tsp vaniella extract

60g vegan dark chocolate (optional)

Method

  1. Preheat the oven to 140 celsius and line a baking tray with baking parchment.

  2. Put the coconut and ground almonds into a bowl and mix together. In another bowl mix together the maple syrup, melted coconut oil and vaniella extract.

  3. Add the wet ingredients to the dry and stir well to combine. Using your hands,create little tight, compact balls of the mixture and put them on a prepared baking tray.

  4. Bake in the oven for 10 minutes, then remove and turn the tray around. Bake for a further 10 minutes, then turn the tray once more and bake for a further 5 minutes.

  5. Allow to cool on the tray for 10 minutes before transferring to a wire rack to cool.

  6. Meanwhile if using dark chocolate, melt it over boiling water in a bowl. Make sure the bowl doesnt touch the water. Drizzle the marcaroons with the chocolate.
